There is no salad dressing in Mexico.Well, not much. You may find some in high-end establishments. But the overwhelming majority of regular restaurants serve your "salad" dry.
You are expected to squeeze lime juice on it and be happy. I´m not.
This site looks at (often loco) aspects of the Mexican culture from the perspective of a Gringo-Mexican who lives in Pátzcuaro, Michoacán. Although there are many delightful aspects to Mexico, these observations tend toward the negative. Positive stuff abounds elsewhere. This is more Ambrose Bierce than Alexis de Toqueville.

Hmmmm.... this must be a non-Chilango thing. Everywhere I eat in Mexico City, the salads are appropriately dressed.
Maybe you need a small hip flask with oil and vinegar. Or perhaps a touch of green goddess?

LOL... I find it very amusing to be categorized in the "hoity-toity class." LOL....
But the truth in that is that I tend to eat in fairly nice places when abroad, though at this very moment, home in Boston, I am eating boxed macaroni and cheese.
But I still think you should consider the hip flask idea.
Do you think the restaurants you patronize would want a corkage fee?

Mistongo Restaurante on C/ Doctor Coss in Pátzcuaro served us a rather thick, mustardy dressing once. (No me gustó.)
Mamá Lupe's on C/ Benito Mendoza has a dark and tasty dresssing for its mini-salads, served as first course in an inexpensive comida corrida.
Felipe: you mean that you can't get salad dressing at La Surtidora or at the Gran Hotel Cafe?
I bet you don't eat at either one.

Mike, I am not suggesting that salad dressings are never seen in Mexican restaurants. However, few serve it, as you know. It´s more of a rarity than not. It´s nice to see it when it does show up.
I have not eaten at the Gran Hotel since my first year here, and we eat at Surtidora on rare occasion, but it´s almost exclusively breakfast.
Plus, Mike, this is not really a blog. It changes rarely. I simply let the nice people at blogger.com supply me with a pretty and FREE website. Can´t beat it.
